Onion Gravy for British Bangers and Mash

Instructions
- Gather all ingredients.
- Melt butter in a heavy-bottomed pan over medium heat. Add onion; cook and stir until softened, about 10 minutes.
- Reduce heat to low; cover, and cook until onions are caramelized, stirring occasionally, about 20 minutes.
- Stir in flour until well mixed.
- Stir in chicken stock, red wine, Dijon mustard, and Worcestershire sauce; simmer until sauce is thickened, stirring frequently, about 15 minutes. Season with salt and pepper.
