Nora Ephron's Orange Praline Yams

Ingredients

  • yams (1 kg)
  • orange juice (0.25 L)
  • orange rind (1 tsp)
  • salt (0.5 tsp)
  • ginger (1 tsp)
  • brown sugar (0.5 cup)
  • pecans (1 cup)
  • butter (2 tbsp)
  • cinnamon (1 tsp)

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. Boil the yams until tender, then drain and mash.
  3. In a bowl, mix the mashed yams with orange juice, orange rind, salt, ginger, and brown sugar until well combined.
  4. Pour the yam mixture into a baking dish.
  5. In another bowl, mix the pecans, melted butter, cinnamon, and brown sugar together.
  6. Sprinkle the pecan mixture over the yam mixture in the baking dish.
  7. Bake for 30 to 45 minutes until golden brown and bubbly.
