No-Bake Cherry Cheesecake

A simple and delicious no-bake cheesecake topped with cherry pie filling.

Ingredients

  • graham cracker crumbs (1.25 cups)
  • unsalted butter (0.25 cups)
  • white sugar (0.25 cups)
  • cream cheese (1 packages (8 ounce))
  • powdered sugar (1 cups)
  • vanilla extract (1 teaspoon)
  • heavy whipping cream (1 cups)
  • cherry pie filling (1 cans (12.5 ounce))

Instructions

  1. To make the crust: Mix graham cracker crumbs, melted butter, and sugar in a bowl until well incorporated and crumbly. Press mixture into a 9-inch pie plate, going up the sides as much as possible.
  2. To make the filling: Beat cream cheese, powdered sugar, and vanilla in a bowl with an electric mixer until smooth and spreadable.
  3. Beat heavy cream in a chilled bowl until soft peaks form. Fold into the cream cheese mixture until smooth.
  4. Pour filling into the prepared crust, and smooth the top with a spatula. Refrigerate until firm, about 2 to 3 hours.
  5. Spread cherry pie filling over the chilled cheesecake. Serve immediately or refrigerate until serving.
