Mock Pecan Pie
A creamy, dreamy dessert that tastes like a pecan pie and cream pie hybrid, made easily with Ritz crackers and topped with whipped cream.
Ingredients
- egg white (3 )
- sugar (1 cup)
- vanilla extract (1 tsp)
- Ritz crackers (1 cup)
- pecans (1 cup)
- whipped topping (1 cup)
Instructions
- Preheat oven to 350°F (175°C).
- Beat egg whites until slightly stiff. Fold in sugar, vanilla, crushed Ritz crackers, and chopped pecans until fully combined.
- Pour the mixture into a greased pie plate and bake for 25 minutes.
- Once cooled to room temperature, cover the top with whipped topping and chill for at least 2 hours.
- (Optional) Toast pecans before mixing and add chopped pecans on top for garnish.
