Mock Pecan Pie

Ingredients

  • egg white (3 )
  • sugar (1 cup)
  • vanilla extract (1 tsp)
  • Ritz crackers (1 cup)
  • pecans (1 cup)
  • whipped topping (1 cup)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Beat egg whites until slightly stiff. Fold in sugar, vanilla, crushed Ritz crackers, and chopped pecans until fully combined.
  3. Pour the mixture into a greased pie plate and bake for 25 minutes.
  4. Once cooled to room temperature, cover the top with whipped topping and chill for at least 2 hours.
  5. (Optional) Toast pecans before mixing and add chopped pecans on top for garnish.
