Mochi Twinkies
Ingredients
- glutinous rice flour (1 cup)
- water (0.5 cup)
- sugar (0.5 cup)
- baking powder (1 tsp)
- vanilla extract (1 tsp)
- salt (0.5 pinch)
- coconut milk (0.5 cup)
- food coloring (0.5 tsp)
Instructions
- In a bowl, mix glutinous rice flour, sugar, and baking powder.
- In another bowl, combine warm water, coconut milk, and vanilla extract.
- Gradually add the wet ingredients to the dry ingredients, mixing until smooth.
- Add food coloring if using, and mix until fully incorporated.
- Pour the mixture into a greased pan.
- Steam for 20-25 minutes until cooked through.
- Allow to cool, then cut into shapes resembling Twinkies.
