Mochi Twinkies

Ingredients

  • glutinous rice flour (1 cup)
  • water (0.5 cup)
  • sugar (0.5 cup)
  • baking powder (1 tsp)
  • vanilla extract (1 tsp)
  • salt (0.5 pinch)
  • coconut milk (0.5 cup)
  • food coloring (0.5 tsp)

Instructions

  1. In a bowl, mix glutinous rice flour, sugar, and baking powder.
  2. In another bowl, combine warm water, coconut milk, and vanilla extract.
  3. Gradually add the wet ingredients to the dry ingredients, mixing until smooth.
  4. Add food coloring if using, and mix until fully incorporated.
  5. Pour the mixture into a greased pan.
  6. Steam for 20-25 minutes until cooked through.
  7. Allow to cool, then cut into shapes resembling Twinkies.
