Ingredients

  • onion (1 medium)
  • minced fresh ginger (1 tablespoon)
  • minced garlic (1 tablespoon)
  • light coconut milk (397 grams)
  • lime juice (3 tablespoons)
  • curry paste (1 tablespoon)
  • brown sugar (1 tablespoon)
  • medium shrimp (12 )
  • sea scallops (12 )
  • asparagus (170 grams)
  • chopped cilantro (2 tablespoons)

Instructions

  1. Heat oil in a large skillet over medium-high heat. Add onion, ginger, and garlic; sauté until onion starts to soften, about 2 to 3 minutes.
  2. Stir in coconut milk, lime juice, curry paste, and brown sugar; bring to a simmer and cook until slightly reduced, about 5 minutes.
  3. Stir in shrimp, scallops, asparagus, cilantro, and salt; cook until shrimp and scallops are no longer translucent in the center, about 5 minutes.
