Mediterranean Brown Rice Salad

Ingredients
- brown rice (1.5 cups)
- water (3 cups)
- red bell pepper (1 )
- green peas (1 cup)
- raisins (0.5 cup)
- sweet onion (0.25 )
- Kalamata olives (0.25 cup)
- vegetable oil (0.5 cup)
- balsamic vinegar (0.25 cup)
- Dijon mustard (1.25 teaspoons)

Instructions
- Bring brown rice and water to a boil in a saucepan over high heat. Reduce heat to medium-low. Cover and simmer until rice is tender and liquid is absorbed, 45 to 50 minutes.
- Combine bell pepper, peas, raisins, onion, and olives in a bowl.
- Whisk oil, vinegar, and mustard together in a separate bowl.
- Stir brown rice and dressing into vegetable mixture. Season with salt and black pepper.
- Top brown rice and vegetables with feta cheese before serving.
