Mediterranean Brown Rice Salad

A refreshing and healthy Mediterranean salad featuring brown rice, vegetables, olives, and a tangy dressing.

Ingredients

  • brown rice (1.5 cups)
  • water (3 cups)
  • red bell pepper (1 )
  • green peas (1 cup)
  • raisins (0.5 cup)
  • sweet onion (0.25 )
  • Kalamata olives (0.25 cup)
  • vegetable oil (0.5 cup)
  • balsamic vinegar (0.25 cup)
  • Dijon mustard (1.25 teaspoons)

  • feta cheese (0.25 cup)

Instructions

  1. Bring brown rice and water to a boil in a saucepan over high heat. Reduce heat to medium-low. Cover and simmer until rice is tender and liquid is absorbed, 45 to 50 minutes.
  2. Combine bell pepper, peas, raisins, onion, and olives in a bowl.
  3. Whisk oil, vinegar, and mustard together in a separate bowl.
  4. Stir brown rice and dressing into vegetable mixture. Season with salt and black pepper.
  5. Top brown rice and vegetables with feta cheese before serving.
