Mashed Peas

A simple and delicious recipe for mashed peas that is perfect as a side dish.

Ingredients

  • olive oil (2 tablespoons)
  • frozen peas (1 package)
  • green onions (1 bunch)
  • fresh mint leaves (1 bunch)
  • unsalted butter (2 tablespoons)
  • brown sugar (2 tablespoons)

Instructions

  1. Heat oil in a large skillet over medium heat. Add frozen peas, green onions, and mint. Cook, stirring until peas are hot and tender but still bright green, 7 to 10 minutes.
  2. Transfer to a bowl and mash until peas are crushed but still slightly chunky. Add butter, brown sugar, salt, and pepper. Stir until butter melts and sugar dissolves.
