Maple Glazed Sweet Potatoes with Bacon and Caramelized Onions

This is a great compromise recipe between the sweet and the savory. Smoky bacon and caramelized onions tilt this sweet potato side dish toward the savory, while pure maple syrup adds a sweet element that balances it all out wonderfully.

Ingredients

  • sweet potatoes (4 pieces)
  • bacon (6 strips)
  • onion (1 piece)
  • maple syrup (1 cup)
  • butter (2 tbsp)
  • salt (1 tsp)
  • black pepper (0.5 tsp)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and dice the sweet potatoes into 1-inch cubes.
  3. In a large bowl, toss the sweet potatoes, 4 slices of bacon (cooked and crumbled), 1 diced onion, maple syrup, butter, salt, and pepper until well combined.
  4. Spread the mixture on a baking sheet in a single layer.
  5. Roast in the preheated oven for about 25 minutes or until the sweet potatoes are tender and golden, stirring halfway through cooking.
  6. Serve warm, garnished with extra crispy bacon if desired.
