Maple Glazed Sweet Potatoes with Bacon and Caramelized Onions
Ingredients
- sweet potatoes (4 pieces)
- bacon (6 strips)
- onion (1 piece)
- maple syrup (1 cup)
- butter (2 tbsp)
- salt (1 tsp)
- black pepper (0.5 tsp)
Instructions
- Preheat the oven to 400°F (200°C).
- Peel and dice the sweet potatoes into 1-inch cubes.
- In a large bowl, toss the sweet potatoes, 4 slices of bacon (cooked and crumbled), 1 diced onion, maple syrup, butter, salt, and pepper until well combined.
- Spread the mixture on a baking sheet in a single layer.
- Roast in the preheated oven for about 25 minutes or until the sweet potatoes are tender and golden, stirring halfway through cooking.
- Serve warm, garnished with extra crispy bacon if desired.
