Make-Ahead Turkey Gravy
Ingredients
- Turkey wings (2 units)
- Butter (4 tbsp)
- All-purpose flour (1 cup)
- Chicken stock (4 cups)
- Salt (1 tsp)
- Black pepper (0.5 tsp)
- Bay leaf (1 leaf)
- Thyme (1 tsp)
- Onion (1 medium)
- Carrots (2 units)
- Celery (2 units)
Instructions
- In a large saucepan, melt butter over medium heat.
- Add the chopped onion, carrots, and celery. Sauté until soft, about 5 minutes.
- Stir in the flour and cook for 1 minute to remove the raw flour taste.
- Gradually whisk in the chicken stock while continuing to stir.
- Add the roasted turkey wings, bay leaf, thyme, salt, and pepper.
- Bring to a simmer and cook for about 20 minutes until thickened.
- Remove the turkey wings and bay leaf from the gravy.
- Blend with an immersion blender until smooth, or use a regular blender in batches.
- Allow to cool, then store in the refrigerator or freeze for later use.
