Make-Ahead Turkey Gravy

Ingredients

  • Turkey wings (2 units)
  • Butter (4 tbsp)
  • All-purpose flour (1 cup)
  • Chicken stock (4 cups)
  • Salt (1 tsp)
  • Black pepper (0.5 tsp)
  • Bay leaf (1 leaf)
  • Thyme (1 tsp)
  • Onion (1 medium)
  • Carrots (2 units)
  • Celery (2 units)

Instructions

  1. In a large saucepan, melt butter over medium heat.
  2. Add the chopped onion, carrots, and celery. Sauté until soft, about 5 minutes.
  3. Stir in the flour and cook for 1 minute to remove the raw flour taste.
  4. Gradually whisk in the chicken stock while continuing to stir.
  5. Add the roasted turkey wings, bay leaf, thyme, salt, and pepper.
  6. Bring to a simmer and cook for about 20 minutes until thickened.
  7. Remove the turkey wings and bay leaf from the gravy.
  8. Blend with an immersion blender until smooth, or use a regular blender in batches.
  9. Allow to cool, then store in the refrigerator or freeze for later use.
