Low Carb Cauliflower Leek Soup

Ingredients

  • butter (3 tablespoons)
  • olive oil (2 tablespoons)
  • leeks (3 )
  • cauliflower (1 large head)
  • garlic (3 cloves)
  • vegetable broth (8 cups)
  • salt (0 )
  • black pepper (0 )
  • heavy cream (1 cup)

Instructions

  1. Heat butter and olive oil in a large pot over medium heat. Add leeks, cauliflower, and garlic; cook and stir for about 10 minutes.
  2. Stir in vegetable broth and bring to a boil. Reduce heat, cover, and simmer for 45 minutes.
  3. Remove soup from heat; blend with an immersion blender until smooth. Season with salt and pepper; add heavy cream and continue blending until smooth.
