Lemon Zest Pie Crust
A buttery, flaky pie crust infused with fresh lemon zest and juice, perfect for any pie filling.
Ingredients
- all-purpose flour (2.25 cups)
- white sugar (0.5 cup)
- cold salted butter (7 tablespoons)
- ice water (3 tablespoons)
- grated lemon zest (1 tablespoon)
- lemon (1 )
- pure vanilla extract (0.5 tablespoon)
Instructions
- Sift flour and sugar into a large bowl. Cut in butter until pea-sized pieces.
- Make a well in flour mixture; pour in water and lemon zest and carefully fold into flour mixture until lightly combined.
- Make another well; pour in lemon juice and lightly fold into batter. Repeat with vanilla extract. Add more water if needed to bring dough together.
- Form dough into 2 equal-sized discs; cover in plastic wrap. Rest in the refrigerator for at least 30 minutes before using.
