Lemon Zest Pie Crust

A buttery, flaky pie crust infused with fresh lemon zest and juice, perfect for any pie filling.

Ingredients

  • all-purpose flour (2.25 cups)
  • white sugar (0.5 cup)
  • cold salted butter (7 tablespoons)
  • ice water (3 tablespoons)
  • grated lemon zest (1 tablespoon)
  • lemon (1 )
  • pure vanilla extract (0.5 tablespoon)

Instructions

  1. Sift flour and sugar into a large bowl. Cut in butter until pea-sized pieces.
  2. Make a well in flour mixture; pour in water and lemon zest and carefully fold into flour mixture until lightly combined.
  3. Make another well; pour in lemon juice and lightly fold into batter. Repeat with vanilla extract. Add more water if needed to bring dough together.
  4. Form dough into 2 equal-sized discs; cover in plastic wrap. Rest in the refrigerator for at least 30 minutes before using.
