Lemon Mochi Cake

A delicious mochi cake made with sweet rice flour and lemon flavor, perfect for gatherings.

Ingredients

  • mochiko (3.5 cups)
  • white sugar (2 cups)
  • instant lemon pudding mix (1 package (3.4 ounces))
  • baking powder (4 teaspoons)
  • milk (3 cups)
  • butter (0.5 cup)
  • eggs (5 )
  • lemon extract (2 teaspoons)

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  2. Stir mochiko, sugar, pudding mix, and baking powder together in a bowl and use a whisk to combine. Whisk in milk and beat out lumps. Whisk in melted butter, then eggs, then lemon extract. Pour mixture into the prepared baking dish.
  3. Bake in the preheated oven until a toothpick inserted in the center comes out clean, about 1 hour.
