Koginut Squash

- olive oil (2 tbsp)

- pepper (0.5 tsp)
Instructions
- Preheat the oven to 400°F (200°C).
- Cut the Koginut squash in half and scoop out the seeds.
- Drizzle olive oil over the cut sides, and sprinkle with salt and pepper.
- Place the squash halves cut side down on a baking sheet.
- Roast in the preheated oven for 30-40 minutes or until tender.
- Let cool slightly, then scoop out the flesh for use in dishes. Alternatively, serve the roasted halves as a side.
