Juicy Thanksgiving Turkey

Ingredients
- turkey (1 whole)
- salt (0.022 kg)
- water (4 liters)
- sugar (0.1 kg)
- garlic (1 clove)
- fresh herbs (3 tbsp)
- butter (0.227 kg)
Instructions
- Prepare a wet brine with water, salt, and sugar (optional).
- Submerge the turkey in the brine and refrigerate for 12 to 24 hours.
- Preheat the oven to 325°F (165°C).
- Remove the turkey from the brine, rinse and pat dry.
- Mix softened butter with minced garlic and chopped herbs, then rub it under the skin of the turkey.
- Place the turkey on a roasting rack and cover with cheesecloth soaked in butter.
- Roast in the preheated oven, basting periodically, and increase the temperature towards the end to crisp up the skin.
- Utilize a meat thermometer to check that the breast reaches 165°F (75°C) and thigh reaches 175°F (80°C).
- Allow the turkey to rest for at least 20 minutes before slicing.
