Joni Mitchell's Lentil Soup

Ingredients

  • onion (1 unit)
  • garlic (2 clove)
  • butter (1 tablespoon)
  • tomato purée (2 tablespoon)
  • paprika (1 teaspoon)
  • red lentils (1 cup)
  • bulgur (1 cup)
  • chicken broth (4 cup)
  • chili flakes (1 pinch)
  • dried mint (1 teaspoon)
  • lemon juice (1 tablespoon)
  • fresh mint (1 tablespoon)

Instructions

  1. Sauté the onion and garlic in unsalted butter until soft.
  2. Add the tomato purée and paprika to the pan, cooking for an additional minute.
  3. Stir in the red lentils, bulgur, and chicken broth, and bring to a simmer.
  4. Cook for 30 minutes until lentils are soft, then purée the soup until smooth.
  5. Finish with chili flakes, mint, and a squeeze of lemon juice before serving.
