Joe Frogger Cookies

Joe Froggers are molasses spice cookies with Colonial New England roots, known for their warm and cozy flavor profile.

Ingredients

  • all-purpose flour (2.5 cups)
  • salt (0.5 tsp)
  • baking soda (1 tsp)
  • ground ginger (1 tsp)
  • ground cloves (0.5 tsp)
  • ground nutmeg (0.5 tsp)
  • allspice (0.5 tsp)
  • vegetable shortening or unsalted butter (0.5 cups)
  • molasses (0.75 cups)
  • brown sugar (0.5 cups)
  • dark rum (0.25 cups)
  • hot water (0.5 cups)

Instructions

  1. In a medium bowl, whisk together the all-purpose flour, salt, baking soda, ginger, cloves, nutmeg, and allspice.
  2. In a large bowl, cream together the vegetable shortening or butter with molasses and brown sugar using an electric mixer.
  3. In a glass measuring cup, combine the hot water and dark rum, stirring to mix.
  4. Gradually add the flour mixture and the rum mixture to the molasses mixture, alternating between the two. Mix until combined.
  5. Cover the dough and refrigerate for at least two hours until soft but not sticky.
  6. When ready to bake, roll out the dough between two sheets of wax or parchment paper to about 1/4-inch thickness.
  7. Use a 3-inch round cookie cutter to cut out discs and transfer them to parchment-lined baking sheets.
  8. Bake in a preheated oven at 375°F (190°C) for 10 to 12 minutes, rotating pans halfway through.
  9. Remove from the oven when edges darken and the centers are set. Allow to cool on wire racks.
