Hearty Ham Bone Black Bean Soup
A delicious and hearty soup made with ham bone, black beans, and a variety of vegetables, perfect for a comforting meal.
Ingredients
- ham bone with some meat (1 )
- olive oil (1 drizzle)
- celery (3 stalks)
- onion (0.5 )
- garlic (4 cloves)
- fingerling potatoes (1 cup)
- red bell pepper (1 small)
- baby carrots (0.5 (12 ounce) package)
- water (4 cups)
- black beans (1 (19 ounce) can)
- vegetable juice (1 (12 fluid ounce) can)
- corn (1 (11 ounce) can)
- tomatoes (2 )
- chopped green chiles (2 tablespoons)
- ground cumin (2 teaspoons)
- salt (0 )
- ground black pepper (0 )
Instructions
- Place ham bone in a large slow cooker.
- Heat olive oil in a large saucepan over medium-high heat. Sauté celery, onion, and garlic until onion is translucent, about 5 minutes; add to slow cooker.
- Sauté potatoes, bell pepper, and carrots in the same saucepan until coated in oil, about 1 minute; transfer to the slow cooker. Add water, black beans, vegetable juice, corn, tomatoes, green chiles, cumin, salt, and black pepper. Cover slow cooker.
- Cook on High until warm, 45 minutes to 1 hour. Reduce heat to Low; continue to cook for 5 to 6 hours.
- Remove ham bone from soup; separate meat from the bone. Add meat to soup; discard bone. Cover soup and refrigerate 8 hours to overnight. Discard thick fat on top of soup; reheat then serve.
