Hearty Chicken and Rice Soup

Ingredients

  • chicken broth (10 cups)
  • onion (1 )
  • sliced celery (1 cup)
  • sliced carrots (1 cup)
  • snipped parsley (0.25 cup)
  • cracked black pepper (0.5 teaspoon)
  • dried thyme leaves (0.5 teaspoon)
  • bay leaf (1 )
  • chicken (0.75 pound)
  • cooked rice (2 cups)
  • lime juice (2 tablespoons)

Instructions

  1. Combine chicken broth, onion, celery, carrots, parsley, pepper, thyme, and bay leaf in a Dutch oven; bring to a boil. Reduce heat to low; simmer until the onion and celery begin to soften, 10 to 15 minutes.
  2. Stir in chicken; simmer until chicken is no longer pink in the middle, 5 to 10 minutes. Remove and discard bay leaf.
  3. Stir in rice and lime juice; cook and stir until rice is heated through and grains separate, about 1 minute. Garnish with lime slices.
