Healthier Carrot Oatmeal Cookies

Ingredients

  • honey (1 cup)
  • coconut oil (0.67 cup)
  • grated carrots (2 cups)
  • eggs (2 )
  • all-purpose flour (1 cup)
  • baking powder (2 teaspoons)
  • ground cinnamon (2 teaspoons)
  • ground nutmeg (0.5 teaspoon)
  • baking soda (0.25 teaspoon)
  • salt (0.25 teaspoon)
  • quick-cooking oats (3 cups)
  • raisins (1 cup)
  • chopped walnuts (0.5 cup)

Instructions

  1. Preheat the oven to 375 degrees F (190 degrees C). Line 2 cookie sheets with parchment paper.
  2. Beat honey and coconut oil in a large bowl with an electric mixer until creamy. Beat in carrots and eggs until combined.
  3. Sift flour, baking powder, cinnamon, nutmeg, baking soda, and salt together in a large bowl; stir into carrot mixture until well combined. Stir in oats, raisins, and walnuts until evenly combined.
  4. Drop large spoonfuls of dough 2 inches apart onto the prepared cookie sheets and flatten with a fork, if desired.
  5. Bake in the preheated oven until tops are golden, about 15 minutes. Cool on the cookie sheet for 1 minute before transferring to a wire rack to cool completely.
