Healthier Banana Crumb Muffins

Delicious and healthier version of banana muffins with a crumb topping.

Ingredients

  • all-purpose flour (1.5 cups)
  • baking soda (1 teaspoon)
  • baking powder (1 teaspoon)
  • salt (0.5 teaspoon)
  • bananas (4)
  • unsalted butter (0.33 cup)
  • white sugar (0.25 cup)
  • egg (1)
  • packed brown sugar (0.33 cup)
  • all-purpose flour (2 tablespoons)
  • ground cinnamon (0.125 teaspoon)
  • unsalted butter (1 tablespoon)

Instructions

  1. Preheat the oven to 375 degrees F (190 degrees C). Lightly grease or line 10 muffin cups with paper liners.
  2. Combine 1 ½ cups flour, baking soda, baking powder, and salt in a large bowl. Beat bananas, 1/3 cup melted butter, white sugar, and egg in a separate bowl; stir into flour mixture just until moistened. Spoon batter into the prepared muffin cups.
  3. Combine brown sugar, 2 tablespoons flour, and cinnamon in a small bowl. Cut in 1 tablespoon butter with a fork until mixture resembles coarse cornmeal; sprinkle over muffins.
  4. Bake in the preheated oven until golden and tops spring back when lightly pressed, 18 to 20 minutes.
