Greek Pasta Salad

A refreshing pasta salad with Mediterranean flavors, perfect for serving at gatherings or as a side dish.

Ingredients

  • penne pasta (2 cups)
  • extra-virgin olive oil (0.67 cup)
  • red wine vinegar (0.25 cup)
  • garlic (2 cloves)
  • lemon juice (1 tablespoon)
  • dried oregano (2 teaspoons)
  • salt (0 )
  • black pepper (0 )
  • cherry tomatoes (10 )
  • green bell pepper (1 )
  • red bell pepper (1 )
  • red onion (1 small)
  • cucumber (0.5 )
  • black olives (0.5 cup)
  • feta cheese (0.5 cup)

Instructions

  1. Gather the ingredients.
  2. Fill a large pot with lightly salted water and bring to a rolling boil. Stir in penne and return to a boil. Cook pasta uncovered, stirring occasionally, until tender yet firm to the bite, about 10 minutes; rinse with cold water and drain well.
  3. Whisk olive oil, vinegar, garlic, lemon juice, oregano, salt, and pepper together in a bowl; set aside.
  4. Combine pasta, tomatoes, green and red peppers, onion, cucumber, olives, and feta cheese in a large bowl. Pour vinaigrette over pasta mixture and mix well. Cover and chill for 3 hours before serving.
