Gluten-Free Vegan Banana Bread Muffins

Ingredients

  • gluten-free all-purpose flour mix (1 cup)
  • light brown sugar (0.5 cup)
  • baking powder (2 teaspoons)
  • ground cinnamon (1 teaspoon)
  • salt (0.25 teaspoon)
  • ripe bananas, mashed (2.5 )
  • applesauce (0.25 cup)
  • extra-virgin olive oil (0.25 cup)
  • vanilla extract (1 teaspoon)

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease an 8-cup muffin tin or line cups with paper liners.
  2. Combine gluten-free flour, sugar, baking powder, cinnamon, and salt in a large bowl.
  3. Mix bananas, applesauce, olive oil, and vanilla extract in a separate bowl. Add banana mixture to flour mixture; mix well until smooth and creamy.
  4. Spoon batter into the prepared muffin cups, filling each 2/3 full.
  5. Bake in the preheated oven until tops spring back when lightly pressed, about 40 minutes.
