German Potato Pancakes

Crispy and delicious potato pancakes made with simple ingredients, perfect for breakfast or as a side dish.

Ingredients

  • eggs (2 large)
  • all-purpose flour (2 tablespoons)
  • baking powder (0.25 teaspoon)
  • salt (0.5 teaspoon)
  • pepper (0.25 teaspoon)
  • potatoes (6 medium)
  • onion (0.5 cup)
  • vegetable oil (0.25 cup)

Instructions

  1. Gather all ingredients.
  2. Beat eggs, flour, baking powder, salt, and pepper together in a large bowl; stir in potatoes and onion.
  3. Heat oil in a large skillet over medium heat. Drop heaping tablespoonfuls of potato mixture into hot oil in batches. Press to flatten.
  4. Cook until browned and crisp, about 3 minutes on each side.
  5. Transfer to a paper towel-lined plate to drain.
