Garlic Rosemary Slow Cooker Whole Chicken

A flavorful slow-cooked whole chicken seasoned with garlic and rosemary, served with potatoes and onions.

Ingredients

  • potatoes (680 grams)
  • onion (1 medium)
  • whole roasting chicken (1 unit)
  • garlic (6 cloves)
  • dried rosemary (2 tablespoons)
  • salt (0 pinch)
  • black pepper (0 pinch)

Instructions

  1. Place potatoes on the bottom of a slow cooker. Top potatoes with onion.
  2. Remove chicken parts from cavity, if included, and reserve for another use. Pat chicken dry with paper towels. Make 4 deep slits on each side of chicken, and 1 deep slit in each drumstick. Press garlic slivers deep into each slit. Place remaining 2 garlic pieces in cavity.
  3. Add salt and pepper to cavity. Generously season outside of chicken with 1 tablespoon rosemary, salt, and pepper. Place chicken breast-side up in the slow cooker. Top with remaining 1 tablespoon rosemary, salt, and pepper.
  4. Cook on Low until an instant-read thermometer inserted into the thickest part of the chicken breast reaches at least 165 degrees F (74 degrees C), 8 to 10 hours. Serve with potatoes and onions from the pot.
