French Onion Beef and Noodles
A hearty meal featuring tender beef in a flavorful onion broth served over noodles, topped with French-fried onions and fresh parsley.
Ingredients
- vegetable oil (2 tablespoons)
- beef stew meat (1 pound)
- sweet onion (1.5 cups)
- garlic (2 cloves)
- beef broth (1 carton (32 ounce))
- condensed French onion soup (1 can (10 1/2-ounce))
- ground black pepper (0.5 teaspoon)
- sour cream (2 thirds cup)
- grated Parmesan cheese (1 thirds cup)
- egg noodles (1 package (12-ounce))
- French-fried onions (1 can (2.8-ounce))
- fresh parsley (2 tablespoons)
Instructions
- Gather all ingredients.
- Heat 1 tablespoon oil in a Dutch oven over medium-high heat. Add beef stew meat and cook until browned on all sides, about 2-3 minutes. Transfer to a plate.
- Add remaining 1 tablespoon oil to the pot. Add onion and garlic, cooking until tender and slightly browned, about 6 minutes. Scrape any browned bits from the pot with a wooden spoon.
- Return beef to the pot. Add broth, condensed soup, and black pepper. Bring to a boil, then reduce heat and simmer for 25-30 minutes until meat is tender.
- Whisk together sour cream and Parmesan cheese in a bowl. Gradually add about 1/2 cup of the hot broth mixture to the cheese bowl, stirring to combine.
- Pour the cheese mixture back into the pot and stir.
- Add egg noodles, cover, and simmer for 5-7 minutes until noodles and beef are tender.
- Serve topped with French-fried onions and chopped parsley.
