Flaky Pie Crust

Ingredients

  • butter (113 grams)
  • flour (250 grams)
  • salt (5 grams)
  • liquid (60 milliliters)

Instructions

  1. Freeze the butter until very firm.
  2. Grate the frozen butter using the largest grating surface of a box grater into a bowl.
  3. Toss the grated butter with the dry ingredients until all pieces are coated.
  4. Chill the mixed butter and flour in the refrigerator if your kitchen is warm.
  5. Add the very cold liquid to the flour mixture, and stir to combine.
  6. Gather the dough into a ball, divide into disks if necessary, wrap in plastic, and refrigerate for 30 minutes before rolling out.
