Faddy’s Port Wine Cocktail Meatballs

Ingredients

  • olive oil (1 tsp)
  • stuffing mix (1 cup)
  • whole milk (1 cup)
  • ground beef (1021 grams)
  • Kosher salt (0.5 tsp)
  • black pepper (0.5 tsp)
  • yellow onions (2 )
  • ketchup (1 cup)
  • port wine (1 cup)
  • granulated sugar (0.5 cup)
  • vinegar (0.25 cup)
  • Worcestershire sauce (0.25 cup)

Instructions

  1. Preheat the oven to 350˚F. Lightly oil a rimmed baking sheet.
  2. In a large bowl, combine the stuffing mix and milk and let sit for about 5 minutes, or until the stuffing absorbs the milk.
  3. Add the beef, salt, pepper, and onions. Use your hands to mix the stuffing and onions evenly into the meat.
  4. Roll the mixture into meatballs the size of ping-pong balls and set on the prepared baking sheet.
  5. Bake for about 30 minutes, or until browned and cooked through. Set aside to drain on paper towels while you make the sauce.
  6. In a medium pot, combine ketchup, port wine, sugar, vinegar, and Worcestershire sauce. Bring to a boil, then reduce heat to a simmer and cook for about 10 minutes.
  7. Pour the sauce over the meatballs, tossing to coat, or transfer everything to a large slow cooker and let simmer over low heat for 3 to 4 hours.
