Fabulous Colcannon Mashed Potatoes and Cabbage
Ingredients

- milk (60 milliliters)
- unsalted butter (60 grams)
- mayonnaise (30 milliliters)
- bacon (4 strips)
- onion (1 )
- garlic (1 clove)
- cayenne pepper (0.25 teaspoon)
- cabbage (0.5 head)
- water (120 milliliters)

- ham (300 grams)
Instructions
- Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain; transfer to a large bowl.
- Stir milk, butter, and mayonnaise into potatoes; mash with a potato masher until smooth.
- Cook and stir bacon in a large skillet over medium heat until fat is rendered, 3 to 5 minutes. Stir in onion, garlic, and cayenne pepper; cook, stirring often, until onion is translucent, about 5 minutes.
- Stir cabbage and water into bacon-onion mixture until cabbage is wilted, about 5 minutes; season with salt and black pepper. Fold into mashed potatoes.
- Cook and stir ham pieces in the same skillet until lightly browned, 3 to 5 minutes; stir into mashed potato-cabbage mixture until combined.
