Elegant Oyster Soup
A rich and creamy oyster soup that captures the essence of the sea, perfect for a special occasion or a comforting meal.
Ingredients
- unsalted butter (1.5 cup)
- carrots (0.5 cup)
- onions (0.5 cup)
- celery (0.5 cup)
- button mushrooms (0.5 cup)
- all-purpose flour (0.25 cup)
- chicken broth (1 quart)
- artichoke hearts (1 can (14 ounce))
- bay leaf (1 )
- salt (0.75 teaspoon)
- cayenne pepper (0.5 teaspoon)
- dried thyme (0.25 teaspoon)
- dried oregano (0.25 teaspoon)
- dried sage (0.25 teaspoon)
- heavy cream (1 cup)
- oysters (12 )
Instructions
- Melt 2 tablespoons butter in a large pot. Add carrots, onions, celery, and mushrooms. Sauté until vegetables soften, about 5 minutes.
- Melt remaining 1/2 cup butter in another large pot. Stir in flour. Cook for 5 minutes.
- Whisk chicken broth into flour mixture. Add sautéed vegetables, artichokes hearts, bay leaf, salt, cayenne pepper, thyme, oregano, and sage. Simmer for 30 minutes over medium heat.
- Whisk in cream and add oysters. Bring to a simmer, but do not boil. Cook until oysters are tender.
