Elegant Oyster Soup

A rich and creamy oyster soup that captures the essence of the sea, perfect for a special occasion or a comforting meal.

Ingredients

  • unsalted butter (1.5 cup)
  • carrots (0.5 cup)
  • onions (0.5 cup)
  • celery (0.5 cup)
  • button mushrooms (0.5 cup)
  • all-purpose flour (0.25 cup)
  • chicken broth (1 quart)
  • artichoke hearts (1 can (14 ounce))
  • bay leaf (1 )
  • salt (0.75 teaspoon)
  • cayenne pepper (0.5 teaspoon)
  • dried thyme (0.25 teaspoon)
  • dried oregano (0.25 teaspoon)
  • dried sage (0.25 teaspoon)
  • heavy cream (1 cup)
  • oysters (12 )

Instructions

  1. Melt 2 tablespoons butter in a large pot. Add carrots, onions, celery, and mushrooms. Sauté until vegetables soften, about 5 minutes.
  2. Melt remaining 1/2 cup butter in another large pot. Stir in flour. Cook for 5 minutes.
  3. Whisk chicken broth into flour mixture. Add sautéed vegetables, artichokes hearts, bay leaf, salt, cayenne pepper, thyme, oregano, and sage. Simmer for 30 minutes over medium heat.
  4. Whisk in cream and add oysters. Bring to a simmer, but do not boil. Cook until oysters are tender.
