Election Cake

A traditional yeasted fruitcake, Election Cake is a hearty dessert originally baked in bulk for voters in early America.

Ingredients

  • flour (3600 grams)
  • butter (4536 grams)
  • sugar (1984 grams)
  • raisins (544 grams)
  • eggs (36 whole)
  • wine (480 milliliters)
  • brandy (960 milliliters)
  • cinnamon (113 grams)
  • allspice (85 grams)

Instructions

  1. Wet the flour with the milk to the consistency of bread overnight, adding one quart yeast.
  2. The next morning, work the butter and sugar together for half an hour to make the cake lighter and whiter.
  3. When the mixture has risen light, add every other ingredient except the plumbs, which you will work in just before going into the oven.
