Easy Pasta Fagioli
A hearty and comforting soup made with tomatoes, beans, and pasta, perfect for colder days.
Ingredients
- olive oil (1 tablespoon)
- carrot (1 )
- celery (1 stalk)
- onion (1 )
- chopped garlic (0.5 teaspoon)
- tomato sauce (4 cans)
- chicken broth (1 can)
- dried parsley (1 tablespoon)
- dried basil leaves (0.5 tablespoon)
- black pepper (0 )
- ditalini pasta (1.5 cups)
- cannellini beans (1 can)
Instructions
- Heat olive oil in a saucepan over medium heat. Add carrot, celery, and onion; cook and stir until soft. Add garlic and sauté briefly.
- Stir in tomato sauce, chicken broth, parsley, basil, and black pepper; simmer for 20 minutes.
- Bring a large pot of lightly salted water to a boil. Add ditalini pasta and cook for 8 minutes or until al dente; drain.
- Add beans and cooked pasta to soup; simmer until heated through, 1 or 2 minutes.
