Easy Lentil Sausage Soup

A hearty soup made with sausages and lentils, perfect for a comforting meal.

Ingredients

  • olive oil (1 tablespoon)
  • sausage links (1.33 pounds)
  • carrots (2 medium)
  • celery (2 stalks)
  • onion (0.5 medium)
  • garlic (2 cloves)
  • brown lentils (1 pound)
  • diced tomatoes (28 ounce)
  • chicken stock (2 quarts)
  • bay leaves (2 large)
  • salt (0 )
  • ground black pepper (0 )

Instructions

  1. Heat oil in a large stockpot over medium heat. Add sausages and cook until they begin to brown, about 5 minutes. Remove sausages to a paper-towel-lined plate and set aside, leaving browned bits and drippings behind.
  2. Add carrots, celery, and onion to the pot. Cook until onion is soft and translucent, about 5 minutes. Add garlic and cook until fragrant, about 1 minute. Add lentils and tomatoes. Stir to combine.
  3. Add chicken stock, bay leaves, and reserved sausages. Bring to a boil over medium-high heat. Reduce heat to medium, cover, and simmer for 25 minutes. Season with salt and pepper.
