Easy Lentil Sausage Soup
Ingredients
- olive oil (1 tablespoon)
- sausage links (1.33 pounds)
- carrots (2 medium)
- celery (2 stalks)
- onion (0.5 medium)
- garlic (2 cloves)
- brown lentils (1 pound)
- diced tomatoes (28 ounce)
- chicken stock (2 quarts)
- bay leaves (2 large)
- salt (0 )
- ground black pepper (0 )
Instructions
- Heat oil in a large stockpot over medium heat. Add sausages and cook until they begin to brown, about 5 minutes. Remove sausages to a paper-towel-lined plate and set aside, leaving browned bits and drippings behind.
- Add carrots, celery, and onion to the pot. Cook until onion is soft and translucent, about 5 minutes. Add garlic and cook until fragrant, about 1 minute. Add lentils and tomatoes. Stir to combine.
- Add chicken stock, bay leaves, and reserved sausages. Bring to a boil over medium-high heat. Reduce heat to medium, cover, and simmer for 25 minutes. Season with salt and pepper.
