Easy Hollandaise Sauce

A simple recipe for a classic hollandaise sauce using butter, egg yolks, and lemon juice.

Ingredients

  • unsalted butter (0.5 cup)
  • egg yolks (2 large)
  • warm water (1 tablespoon)
  • fresh lemon juice (1 tablespoon)
  • coarse salt (0.75 teaspoon)
  • ground cayenne pepper (1 pinch)

Instructions

  1. Melt butter in a small saucepan over medium heat until bubbly; do not let brown.
  2. Combine egg yolks, water, lemon juice, salt, and cayenne pepper in a blender; blend until frothy. With blender running, pour in hot butter in a very thin stream, blending until sauce is thick and emulsified. Immediately pour sauce into a serving bowl.
