Dad's Leftover Turkey Pot Pie

A comforting pot pie made with turkey and vegetables, perfect for using up Thanksgiving leftovers.

Ingredients

  • chopped turkey (4 cups)
  • frozen mixed vegetables (2 cups)
  • onion (1 medium)
  • celery (2 stalks)
  • flour (0.5 cups)
  • butter (0.5 cups)
  • chicken broth (2 cups)
  • milk (1 cup)
  • black pepper (1 tsp)
  • salt (1 tsp)
  • pie crusts (2 units)

Instructions

  1. Preheat oven to 425°F (220°C).
  2. In a saucepan, melt butter over medium heat. Stir in the onion and celery, and cook until tender.
  3. Stir in the flour, then slowly add the chicken broth and milk while stirring. Cook until the mixture thickens.
  4. Stir in the chopped turkey, mixed vegetables, and seasoning (salt, pepper).
  5. Place one pie crust in a 9-inch pie pan, and pour the filling into the crust. Cover with the second pie crust and seal the edges.
  6. Cut slits in the top crust to allow steam to escape.
  7. Bake in the preheated oven for 30 to 40 minutes, or until the crust is golden brown.
