Dad's Leftover Turkey Pot Pie
A comforting pot pie made with turkey and vegetables, perfect for using up Thanksgiving leftovers.
Ingredients
- chopped turkey (4 cups)
- frozen mixed vegetables (2 cups)
- onion (1 medium)
- celery (2 stalks)
- flour (0.5 cups)
- butter (0.5 cups)
- chicken broth (2 cups)
- milk (1 cup)
- black pepper (1 tsp)
- salt (1 tsp)
- pie crusts (2 units)
Instructions
- Preheat oven to 425°F (220°C).
- In a saucepan, melt butter over medium heat. Stir in the onion and celery, and cook until tender.
- Stir in the flour, then slowly add the chicken broth and milk while stirring. Cook until the mixture thickens.
- Stir in the chopped turkey, mixed vegetables, and seasoning (salt, pepper).
- Place one pie crust in a 9-inch pie pan, and pour the filling into the crust. Cover with the second pie crust and seal the edges.
- Cut slits in the top crust to allow steam to escape.
- Bake in the preheated oven for 30 to 40 minutes, or until the crust is golden brown.
