Cottage Cheese Brownie Batter

A delicious and healthy alternative to traditional brownie batter that incorporates cottage cheese for added protein and creaminess.

Ingredients

  • cottage cheese (1 cup)
  • maple syrup (6 tablespoons)
  • cocoa powder (3 tablespoons)
  • quick oats (3 tablespoons)
  • almond butter (1 tablespoon)
  • vanilla extract (1 teaspoon)
  • espresso powder (1 teaspoon)
  • salt (1 pinch)
  • almond flour (1 cup)
  • chocolate chips (5 tablespoons)

Instructions

  1. Place cottage cheese, maple syrup, cocoa powder, oats, almond butter, vanilla, espresso powder, and salt into the cup of a high-speed blender. Blend until ingredients are smooth. Add almond flour to blender and blend until combined. Pulse if necessary to prevent warming the mixture.
  2. Pour batter into a bowl and fold in chocolate chips. Serve immediately, or cover and keep stored in the refrigerator for up to 5 days.
