Costco's Pumpkin Cheesecake

Ingredients
- canned pumpkin (1 cup)
- sour cream (1 cup)
- sugar (1 cup)
- pumpkin spice (2 tbsp)
- graham cracker crust (1 pre-made)
- cream cheese (2 cups)
- eggs (3 large)
- vanilla extract (1 tsp)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, beat the cream cheese until smooth. Add in the sugar and mix well.
- Beat in the sour cream, canned pumpkin, pumpkin spice, and vanilla extract.
- Add the eggs one at a time, mixing until fully incorporated after each addition.
- Pour the pumpkin filling into the graham cracker crust.
- Bake for about 60 minutes, or until the center is set. Allow to cool for a few hours before serving.
