Corn with Tarragon and Lime
A quick and flavorful corn dish with fresh herbs and citrus.
Ingredients
- frozen baby corn (1 package)
- water (0.5 cup)
- unsalted butter (4 tablespoons)
- fresh tarragon (3 tablespoons)
- lime (1 large)
- lime juice (0.5 tablespoon)
- salt and black pepper (0 )
Instructions
- Empty frozen corn into a 2-quart saucepan, and stir in water. Bring to a boil over medium-high heat, cover, and cook, stirring occasionally, until tender, about 4 minutes. Drain well.
- Return saucepan to the stove over low heat, add butter, tarragon, lime zest, and juice. Stir until butter has melted and corn is warm, about 2 minutes. Season with salt and pepper, and serve.
