Coquito

A traditional Puerto Rican holiday drink that is rich, creamy, and coconut-based with rum.

Ingredients

  • evaporated milk (1 can)
  • egg yolks (2 large)
  • cream of coconut (1 can)
  • sweetened condensed milk (1 can)
  • white rum (0.5 cup)
  • water (0.5 cup)
  • vanilla extract (1 teaspoon)
  • ground cinnamon (0.5 teaspoon)
  • ground cloves (0.25 teaspoon)

Instructions

  1. Gather all ingredients.
  2. Combine evaporated milk and egg yolks in the top of a double boiler over simmering water. Cook, stirring constantly, until thick enough to coat the back of a spoon and reaches a temperature of 160°F (71°C).
  3. Transfer mixture to a blender. Add cream of coconut, sweetened condensed milk, rum, water, vanilla, cinnamon, and cloves; blend until combined, about 30 seconds.
  4. Pour into sterilized glass bottles and store in the refrigerator; serve cold or over ice.
