Coquito
A traditional Puerto Rican holiday drink that is rich, creamy, and coconut-based with rum.
Ingredients
- evaporated milk (1 can)
- egg yolks (2 large)
- cream of coconut (1 can)
- sweetened condensed milk (1 can)
- white rum (0.5 cup)
- water (0.5 cup)
- vanilla extract (1 teaspoon)
- ground cinnamon (0.5 teaspoon)
- ground cloves (0.25 teaspoon)
Instructions
- Gather all ingredients.
- Combine evaporated milk and egg yolks in the top of a double boiler over simmering water. Cook, stirring constantly, until thick enough to coat the back of a spoon and reaches a temperature of 160°F (71°C).
- Transfer mixture to a blender. Add cream of coconut, sweetened condensed milk, rum, water, vanilla, cinnamon, and cloves; blend until combined, about 30 seconds.
- Pour into sterilized glass bottles and store in the refrigerator; serve cold or over ice.
