Coconut Blueberry Baked Oatmeal
A delicious and healthy baked oatmeal dish with coconut and blueberries, perfect for breakfast.
Ingredients
- rolled oats (2 cups)
- unsweetened flaked coconut (1 cup)
- light brown sugar (0.25 cup)
- baking powder (1 tsp)
- ground cinnamon (1 tsp)
- salt (0.5 tsp)
- skim milk (2 cups)
- coconut oil, softened (3 tbsp)
- large egg, beaten (1 )
- vanilla extract (1 tsp)
- blueberries (1.5 cups)
Instructions
- Preheat the oven to 350 degrees F (175 degrees C). Grease an 8-inch square baking dish.
- Combine oats, coconut flakes, brown sugar, baking powder, cinnamon, and salt in a bowl. Whisk milk, coconut oil, egg, and vanilla extract together in a separate bowl.
- Arrange 2/3 of the blueberries in the bottom of the prepared baking dish. Spread the oat mixture over the blueberries. Pour the milk mixture over the oats, then sprinkle the remaining blueberries on top.
- Bake in the preheated oven until golden on top and oatmeal is set, about 40 minutes. Cool for 5 minutes before serving.
