Chilled Lo Mein Noodles with Szechuan Peppercorns

A quick and easy recipe for chill lo mein noodles with a flavorful vinaigrette and topped with peanuts and fresh herbs.

Ingredients

  • lo mein noodles (170 grams)
  • peanut oil (45 milliliters)
  • Chinese black rice vinegar (45 milliliters)
  • soy sauce (15 milliliters)
  • sugar (15 grams)
  • jalapeno pepper (1 )
  • garlic (2 )
  • Szechuan peppercorns (5 grams)
  • dry-roasted peanuts (35 grams)
  • green onions (30 grams)
  • cilantro leaves (15 grams)

Instructions

  1. Prepare noodles according to package directions. Drain; rinse with cold water until cool. Drain well. Use kitchen shears to cut noodles into smaller pieces.
  2. For vinaigrette, whisk together oil, vinegar, soy sauce, sugar, jalapeño, garlic, and peppercorns in a small bowl until sugar dissolves.
