Chilled Lo Mein Noodles with Szechuan Peppercorns
A quick and easy recipe for chill lo mein noodles with a flavorful vinaigrette and topped with peanuts and fresh herbs.
Ingredients
- lo mein noodles (170 grams)
- peanut oil (45 milliliters)
- Chinese black rice vinegar (45 milliliters)
- soy sauce (15 milliliters)
- sugar (15 grams)
- jalapeno pepper (1 )
- garlic (2 )
- Szechuan peppercorns (5 grams)
- dry-roasted peanuts (35 grams)
- green onions (30 grams)
- cilantro leaves (15 grams)
Instructions
- Prepare noodles according to package directions. Drain; rinse with cold water until cool. Drain well. Use kitchen shears to cut noodles into smaller pieces.
- For vinaigrette, whisk together oil, vinegar, soy sauce, sugar, jalapeño, garlic, and peppercorns in a small bowl until sugar dissolves.
