Chicken Parmigiana
You don't have to go to an Italian restaurant for a fancy dinner. This breaded Chicken Parmigiana is delicious served over your favorite pasta and with a side of greens.
Ingredients
- chicken breasts (2 pieces)
- bread crumbs (1 cup)
- parmesan cheese (1 cup)
- mozzarella cheese (1 cup)
- egg (1 pieces)
- olive oil (1 tbsp)
- marinara sauce (1 cup)
Instructions
- Preheat oven to 375°F (190°C).
- Set up a breading station by placing the flour, beaten eggs, and bread crumbs in three separate dishes.
- Dredge each chicken breast first in flour, shaking off excess, then dip into the egg, allowing excess to drip off, and finally coat with breadcrumbs.
- In a large skillet, heat olive oil over medium heat. Once hot, add the breaded chicken breasts and cook until golden brown, about 3-4 minutes per side.
- Transfer the chicken to a baking dish. Top each piece with marinara sauce and sprinkle with mozzarella and parmesan cheese.
- Bake in preheated oven until cheese is bubbly and chicken is cooked through, about 20 minutes.
