Chicken Parmigiana

You don't have to go to an Italian restaurant for a fancy dinner. This breaded Chicken Parmigiana is delicious served over your favorite pasta and with a side of greens.

Ingredients

  • chicken breasts (2 pieces)
  • bread crumbs (1 cup)
  • parmesan cheese (1 cup)
  • mozzarella cheese (1 cup)
  • egg (1 pieces)
  • olive oil (1 tbsp)
  • marinara sauce (1 cup)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Set up a breading station by placing the flour, beaten eggs, and bread crumbs in three separate dishes.
  3. Dredge each chicken breast first in flour, shaking off excess, then dip into the egg, allowing excess to drip off, and finally coat with breadcrumbs.
  4. In a large skillet, heat olive oil over medium heat. Once hot, add the breaded chicken breasts and cook until golden brown, about 3-4 minutes per side.
  5. Transfer the chicken to a baking dish. Top each piece with marinara sauce and sprinkle with mozzarella and parmesan cheese.
  6. Bake in preheated oven until cheese is bubbly and chicken is cooked through, about 20 minutes.
