Cherry Tomato Salad

A refreshing salad combining cherry tomatoes, olives, and pine nuts with a tangy dressing.

Ingredients

  • cherry tomatoes (40 pieces)
  • green olives (1 cup)
  • black olives (1 can)
  • green onions (2 pieces)
  • pine nuts (3 ounces)
  • olive oil (0.5 cup)
  • red wine vinegar (2 tablespoons)
  • white sugar (1 tablespoon)
  • dried oregano (1 teaspoon)
  • salt and pepper (0 )

Instructions

  1. In a big bowl, combine cherry tomatoes, green olives, black olives, and green onions.
  2. In a dry skillet, toast pine nuts over medium heat until golden brown, turning frequently. Stir into the tomato mixture.
  3. In a small bowl, mix together olive oil, red wine vinegar, sugar, and oregano. Season to taste with salt and pepper. Pour over salad, and gently stir to coat. Chill for 1 hour.
