Cherry Tomato Salad
A refreshing salad combining cherry tomatoes, olives, and pine nuts with a tangy dressing.
Ingredients
- cherry tomatoes (40 pieces)
- green olives (1 cup)
- black olives (1 can)
- green onions (2 pieces)
- pine nuts (3 ounces)
- olive oil (0.5 cup)
- red wine vinegar (2 tablespoons)
- white sugar (1 tablespoon)
- dried oregano (1 teaspoon)
- salt and pepper (0 )
Instructions
- In a big bowl, combine cherry tomatoes, green olives, black olives, and green onions.
- In a dry skillet, toast pine nuts over medium heat until golden brown, turning frequently. Stir into the tomato mixture.
- In a small bowl, mix together olive oil, red wine vinegar, sugar, and oregano. Season to taste with salt and pepper. Pour over salad, and gently stir to coat. Chill for 1 hour.
