Chef John's Sweet Potato Casserole

Sweet potato casserole is the heart of the Thanksgiving table. Creamy, cozy, and spiced to perfection, it's a dish that evokes memories of good times and even better food.

Ingredients

  • Sweet potatoes (4 large)
  • Butter (3 tbsp)
  • Brown sugar (2 tbsp)
  • Vanilla extract (1 tsp)
  • Cinnamon (0.5 tsp)
  • Egg (1 )
  • Chopped pecans or nuts (0.5 cup)
  • Marshmallows (1 cup)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Peel and chop the sweet potatoes into large chunks. Boil sweet potatoes in a large pot of water until tender, about 15-20 minutes. Drain well and return to the pot.
  3. Mash sweet potatoes with a potato masher or fork until coarsely mashed.
  4. Add melted butter, brown sugar, vanilla extract, and cinnamon to the sweet potatoes and mix well.
  5. Let the mash cool slightly, then stir in the egg until fully combined.
  6. Transfer mashed sweet potatoes to a greased casserole dish.
  7. Top with chopped pecans or any other desired topping, and optionally layer marshmallows on top.
  8. Bake in the preheated oven for 25-30 minutes or until heated through and lightly browned.
