Chef John's Roast Turkey and Gravy
A juicy, perfectly cooked turkey that is easy for novice cooks to achieve by spreading seasoned butter under the skin.
Ingredients
- whole turkey (1 piece)
- salt (1 tablespoon)
- black pepper (1 tablespoon)
- butter (1 cup)
Instructions
- Preheat the oven to 325°F (165°C).
- Spread softened butter under the skin of the turkey, season the outside with salt and pepper.
- Place the turkey in a roasting pan breast side up, and cover loosely with foil.
- Roast until the internal temperature reaches 165°F (75°C), about 15 minutes per pound.
- Let the turkey rest for 15 minutes before carving.
