Chef John's Roast Turkey and Gravy

Ingredients

  • whole turkey (1 piece)
  • salt (1 tablespoon)
  • black pepper (1 tablespoon)
  • butter (1 cup)

Instructions

  1. Preheat the oven to 325°F (165°C).
  2. Spread softened butter under the skin of the turkey, season the outside with salt and pepper.
  3. Place the turkey in a roasting pan breast side up, and cover loosely with foil.
  4. Roast until the internal temperature reaches 165°F (75°C), about 15 minutes per pound.
  5. Let the turkey rest for 15 minutes before carving.
