Chef John's Pumpkin Pie

A rich pumpkin pie that is less likely to crack on top, served with whipped cream and freshly grated nutmeg.

Ingredients

  • pumpkin puree (1 cup)
  • sugar (3 tbsp)
  • brown sugar (3 tbsp)
  • eggs (2 whole)
  • pumpkin pie spice (1 tsp)
  • salt (0.5 tsp)
  • evaporated milk (1 cup)
  • pie crust (1 )

Instructions

  1. Preheat your oven to 425 degrees F (220 degrees C).
  2. In a large bowl, combine pumpkin puree, sugars, eggs, pumpkin pie spice, salt, and evaporated milk. Mix until smooth.
  3. Pour the pumpkin mixture into the prepared pie crust.
  4. Bake for 15 minutes at 425 degrees F (220 degrees C).
  5. Reduce the heat to 350 degrees F (175 degrees C) and continue to bake for 35-40 minutes, until the filling is set.
  6. Remove from the oven and let it cool before serving. Serve chilled or at room temperature, topped with whipped cream and freshly grated nutmeg.
