Chef John's Pumpkin Pie
A rich pumpkin pie that is less likely to crack on top, served with whipped cream and freshly grated nutmeg.
Ingredients
- pumpkin puree (1 cup)
- sugar (3 tbsp)
- brown sugar (3 tbsp)
- eggs (2 whole)
- pumpkin pie spice (1 tsp)
- salt (0.5 tsp)
- evaporated milk (1 cup)
- pie crust (1 )
Instructions
- Preheat your oven to 425 degrees F (220 degrees C).
- In a large bowl, combine pumpkin puree, sugars, eggs, pumpkin pie spice, salt, and evaporated milk. Mix until smooth.
- Pour the pumpkin mixture into the prepared pie crust.
- Bake for 15 minutes at 425 degrees F (220 degrees C).
- Reduce the heat to 350 degrees F (175 degrees C) and continue to bake for 35-40 minutes, until the filling is set.
- Remove from the oven and let it cool before serving. Serve chilled or at room temperature, topped with whipped cream and freshly grated nutmeg.
